Lemon Chicken Soup

Our family has been sick with colds for the past two weeks and I was in desperate need of a warm chicken soup.  Of course I couldn't just make the normal chicken noodle-  so I made my own variation which turned out to be my favorite variation!







The lemon add a brightness that makes me happy and makes me forget my annoying stuffy nose.   Instead of noodles, which I never seem to have in my pantry, I added white beans but noodles would be just as good!

Variation:  I don't always like using the egg yolks to add the creaminess, so I made a separate roux and then added it to the soup-  Still yum!  (add the extra lemon juice to the broth)

1/4 cup butter
1/4 cup + 1 tbsp flour
1/2-1 cup milk

Melt butter, add flour and cook for 1 minute.  Pour in milk slowly until thickened.  Slowly stir into hot soup.

  1. This soup looks so tasty and comforting. I like the addition of white beans instead of noodles for a simple twist.
