Chocolate Brownie Pancakes

Brownies for breakfast?  Anything goes as long as a two year old will eat it.   These pancakes are chocolatey, moist, and perfect with strawberries. 




It is well known in our family that my older sister would often eat left over brownies for breakfast.  My mother refers to her as her brownie loving daughter.  Now, with this recipe, she can justify eating chocolate for breakfast.

The original recipe calls for eggs, however, with our "no egg boy",  I replaced the eggs with greek yogurt.   I substituted 1/3 cup yogurt for 1 egg.   This added a little tang that complimented the chocolate well. 

If you need even more of a chocolate fix, make or buy a chocolate sauce to drizzle on top.
