Sun. I am so grateful for the warmth of it. It has been a long cold winter and a wet spring. It makes me so happy to just walk outside without struggling to zip up kids' coats.
As much as I love the warmth from the sun, I love the food that comes with it even more. Summertime brings fresh fruits and vegetables which combine to make light healthy dinners. This salad is made with all arugula that came directly from a local farmer. We love the spicy kick that it adds to our salad.
